Even if you have never baked bread or it has not worked out so far, you can now conjure up a great bread very quickly. It's really child's play. In addition, the bread will convince you with its fantastic taste and its crispy bread crust, which will immediately remind you of a hearty farmhouse bread. You can safely eat the bread during the ketogenic diet as it is very low in carbohydrates. It also contains no yeast.
Preparation:
The preparation is simple and easy. The ingredients that are needed (4 eggs, 200ml water, 250g quark, 20% fat in dry matter) are usually in the fridge anyway. Simply stir the liquid ingredients until foamy, add the baking mixture and knead for a few minutes. Then shape a loaf of bread with wet hands. For the look we recommend to roll the loaf in a flour substitute (for example with Konzelmann's bamboo fibers).
Now you should cut into the surface of the bread a little. The loaf of bread should rest a little - we recommend 30 minutes. After the resting time, it goes into the preheated oven (200º C, upper and lower heat, lower third) for about 80 minutes.
The nutritional values alone score points. With just 4,4 g of carbohydrates and over 12 g of protein, "Das Rustikale" bread can be seen anywhere and will definitely support you in your weight loss. In comparison, the bread has over 90% less carbohydrates than conventional bread. But you forget this with its special taste.
Without any wheat gluten!
The aim of Konzelmann's was to avoid wheat protein (wheat gluten) in this variant. The binder in this bread are the eggs and, among other things, the psyllium husks. At first it is not common to make bread with eggs and quark. But you can be sure that you won't taste either of the two in the finished bread.
